- Our healthy recipe of the week:
- Ingredients: (serves 2-3)
- 450grams cleaned and de-veined prawns
- 1 tablespoon of butter
- 2 tablespoons of olive oil
- 4 large garlic cloves, crushed
- Juice of 1/2 a lemon
- 1/2 cup of dry white wine
- Pinch of dried chilli flakes to taste
- Salt and pepper to taste
- Directions:
- 1. Heat the butter and oil in a frying pan over med-hot heat until foam subsides.
- 2. Add the garlic, parsley, lemon juice, wine, chilli flakes, salt and pepper.
- 3. Bring to the boil, lower heat and simmer for three minutes.
- 4. Add prawns and cook, stirring frequently, for 5-6 minutes till prawns are pink.
- 5. Remove from heat.
- 6. Place prawns on serving plate and pour sauce over prawns from the frying pan.
- 7. Serve immediately with either steamed Asian greens, steamed vegetables or Asian coleslaw.
